When Pooja Bavishi made the decision to establish her ice-cream company, Malai, she did so with a clear, personal vision. "I created Malai in order to honor the tastes I was raised with as a first generation Indian American in a popular and mainstream fashion," she says.
"Everyone has an ice cream memories from childhood and the majority of them are about going to the local ice cream store to share a treat with your loved ones," Pooja says. That infusion of nostalgia has taken Malai from a stand at markets and local food halls to freezers in grocery stores and pop-up carts all over New York City, and a bustling flagship store located in Brooklyn providing both local and national delivery.
